8 cherry tomatoes, halved
4 gold kiwi fruits, sliced into bite-size pieces
1 carrot, shredded
8 prawns, shelled and cooked
3 sprigs coriander, shredded
2 sprigs mint leaves
2 tbsps peanuts, toasted and chopped
Dressing (mixed well)
3 tbsps lime juice
3 tbsps fish sauce
1 tbsp brown sugar
2 cloves garlic, minced
1 red chilli, sliced
- Place cherry tomatoes, kiwi fruits, carrot, prawns and coriander in a bowl. Pour dressing over and toss gently.
- Garnish with mint leaves and peanuts, and serve at once
